Grabbage

cabbageSarah shares a proven (& White House-approved) soup recipe.

Cabbage Soup:

1) Start by making smothered cabbage.
Ingredients:
1 lb chopped cabbage
1/2 - 1 onion
1 tbsp vinegar
1/2 c. olive oil

2) Soften onion in olive oil. Stir in cabbage & vinegar & cook for 1.5 hrs.

3) Next, prepare a broth.
Ingredients:
(vegans omit the last 2 items--"still pretty good")
3 cups broth
2/3 cup rice (arborio or some other short-grained)
2 T. butter
1/3 cup parmesan

4) Put cabbage into pot with broth, bring to boil & add rice. Stir occasionally until rice is just done. May need to add extra water or stock. Add butter & cheese.

5) Stir.

6) Eat.
